Sorpotel
Ingredients
- 2 lbs. pork (leanish belly)
- 2 whole cinnamon/bay leaves
- 3 tsp. chilli powder
- ¼ tsp. turmeric powder
- ½ tsp. whole cumin
- ½ tsp. whole mustard
- 2 tbsp whole coriander
- ¼ tsp. whole pepper corns (powdered fine)
- 1 cloves
- 2” piece cinnamon
- 2 med. Red onions diced fine
- 2 green chillies chopped fine
- 1” piece ginger chopped fine
- 6-7 flakes garlic sliced fine
- 1 tsp tamarind paste
- 3 tbsp vinegar
- Salt to taste
Method
Boil pork in ½ pint of water with the cinnamon or bay leaves for around 10 mins.
When cooled cut the pork into very small pieces and place in a pan.
Add to this, all the cut onions, green chillies, ginger, garlic, and the ground dry spices including the chilli and turmeric powders.
Add salt, vinegar and tamarind paste and cook in the slow cooker for 6 hrs on high heat for the first hour and then on slow heat for the remainder.
