Chappaties
Ingredients
- 2 cups plain flour
- ¼ cup wholemeal flour
- 1 cup lukewarm water
- 2 tablesps oil
- 2 teasps salt
- ¼ cup oil for pinning out as well as frying.
Method
Sift the plain and wholemeal flour together in a large bowl.
Mix the salt, water and oil in a cup.
Make a well in the flour and pour the water and oil and mix, forming a soft dough.
Leave aside for 1-2 hours to settle.
Divide dough into 15 portions to form round balls.
Pin out each portion first to 5cm diam. circle. Spread ¼ a tsp of oil on the surface and then sprinkle a good pinch of flour over it.
Fold to form a three layer [long] piece.
Fold as above but widthways to form a square shape.
Leave aside in a closed container until all 15 portions are done.
Pin out each folded square thinly into perfect round shapes.
Frying
Heat a lightly greased pan until hot.
Fry chappati for approx. 1 min. on each side and then grease both sides with a spoon of oil when it starts to puff up.
Store in a container lined with kitchen towel.
