Kashmiri Chilli Fry
Ingredients
- 2 lbs meat (braising steak)
- 3 small/medium sized onions (finely sliced)
- 6 cloves of garlic
- 1 tsp chilli powder
- 1 tsp turmeric powder
- 2 tsps cumin powder
- 4 tbsps veg. Oil
- 1 tbsps vinegar
- 1 can plum tomatoes
- 2tbsp tomato puree
- ½ cup water
- Salt to taste
Method
Fry onions in oil till golden brown in a large heavy based pot.
Grind roasted cumin.
Blend in a mixer peeled garlic, tomatoes, turmeric, chilli and cumin powders.
Add the blended spiced mixture (masala) to the fried onions and fry till oil separates.
Wash, trim and dice meat. Add meat to the fried masala on high heat making sure the meat is sealed and well coated with spices.
Add water and cook for 20 mins. on medium heat.
Now add salt and vinegar and cook for a further 30 mins. until meat is tender.
