Fish Curry

Ingredients


  • 2 lbs fish (Salmon/Cod)
  • 1 tsp red chilli powder
  • 1/8 tsp whole cumin seeds
  • 4 “ pepper corns
  • ¼ tsp turmeric powder
  • 1 clove garlic
  • 1 tbsp coriander seeds
  • 1 medium onion
  • ½ can creamed coconut
  • 1tsp tamarind paste
  • 2tbsps vinegar
  • 1” ginger
  • 1 green chilli
  • 1tbsp oil

Method


Roast and powder cumin, pepper and coriander seeds very fine.


Blend together ground cumin, coriander, turmeric, chilli, pepper along with ¼ of the onion, garlic and tamarind to form a smooth paste.


Slice ½ the onion finely and fry until golden brown.


Add ground spices to the fried onion and fry for a few minutes till oil separates.


Slice the remaining onion, chop ginger, chilli and add to the fried masala.


Add the coconut cream to form a gravy.


Add vinegar and salt to taste.


Add fish cut in 4" chunks to the simmering gravy and cook for 5 - 8 minutes until fish is just cooked through.


This dish is best eaten with plain boiled rice to appreciate the flavour of the fish. It is also very important to adhere to the recipe, as too much cumin will alter the whole taste of the dish.
